An evening to Remember. We will marvel at the room complete with Daggers on the wall, colorful Tapestries, Banquettes upholstered in heavy,  plush fabrics with a background of sound of Keyboard, drums and finger cymbals. Then there will be the host's Caftan and Fez!
The thrill of eating with our fingers in Public!!! Oooh!!
      The meal is billed as a holiday-styled dinner, which accurately describes the feeling of abundance and complexity in every course as we lounge on benches, and pillows. Each course arrives with a flourish, a short explanation of ingredients and an expression of hospitality.

The
moroccan salad platter is a mosaic of cucumber, tomato, sweet pepper & Coriander; another row of garlicky carrots; and more of roasted eggplant - All arranged in colorful ranks on one large platter. Our only utensil will be chunks torn off the warm semi-flat Bread-also known as kobiz.    With a large towel in our laps we will learn to wield the Bread/Spoon with minor dribbles. The Towels are a step up from the storied practice of offering guests Persian hounds as furry handiwipes...

Even after a weekend of non-stop wine consumption, it's never too early to savor superior Bordeaux. On Sunday morning, members of the Thienpont family presented offerings from six properties they own and manage, including Pomerol heavy-hitters Vieux-Château-Certan and Château Le Pin.

The first selection, the Château Les Charmes-Godard 1999, is the only white made by the Thienponts. Only about 800 cases are bottled per year, from a Right Bank vineyard in the Côtes de Francs, east of St.-Emilion. The blend of 70 percent Sémillon, 15 percent Muscadelle and 15 percent Sauvignon Blanc started the event on the right note, with an accessible combination of ripe fig, creamy vanilla, floral and tangy lemon tones.

But the Thienponts, a Belgian family that has been in the wine trade since 1842, are best known for Merlot-based blends. The introductory reds were the 1998 and 1989 Château Puygueraud, also in the Côtes de Francs, from vineyards planted with 55 percent Merlot, 25 percent Cabernet Franc, 15 percent Cabernet Franc and 5 percent Malbec. Discussing the 1989, Nicolas Thienpont, who oversees production at the property, said, "Bordeaux that year had a rendezvous with Provence," referring to the unusually warm weather.

In addition to its Right Bank properties, the family also owns the Margaux vineyard Château Labégorce-Zédé, a 70-acre vineyard planted to 50 percent Cabernet Sauvignon, 35 percent Merlot, 10 percent Cabernet Franc and 5 percent Petit Verdot. Winemaker Luc Thienpont presented two vintages, the 1995 and the 1989. He described the 1995 as classic Margaux, stylish and firm, with years of evolution ahead. The 1989 is drinking well, with pretty plum, black currant and blackberry flavors.

Nicolas next led the seminar back across the river to Château Pavie-Macquin, a respected St.-Emilion property he manages. "These two vintages, the 1998 and 1989, are very different styles," he said, noting that the wonderfully ripe 1998 showed the benefits of excellent August weather.

Conditions were so good that year that the family didn't believe it necessary to make the second label, Les Chênes de Macquin. Lush and concentrated, the 1998 Pavie-Macquin has loads of black currant, blackberry, vanilla and spice flavors that are tempting to drink now, but will benefit from bottle age.

The 1989 Pavie-Macquin didn't equal the richness of the younger vintage, but still offered excellent intensity in its black licorice, mineral, currant and black cherry flavors.

Perhaps the best-known Thienpont property is Vieux-Château-Certan, which was the first Bordeaux estate purchased by the family, in 1924. A source of outstanding Pomerol for more than 50 years, the vineyard currently comprises 35 acres planted to 60 percent Merlot, 30 percent Cabernet Franc and 10 percent Cabernet Franc.

Alexandre Thienpont, who manages the estate, presented two vintages, 1998 and 1990. The 1998 was a stunner, amply fulfilling expectations with incredibly lush, sumptuous flavors. "When you taste this, you see the cashmere side of the wine," Alexandre aptly observed.

The 1990, made with a larger proportion of Cabernet Franc, was fairly mature, with fine intensity to its currant and roasted herb tones.

The seminar concluded with the 1999 and 1994 vintages of one of Bordeaux's most exalted wines, Château Le Pin. The darling of auctioneers and millionaire collectors, Le Pin yields about 500 cases per year from a 5-acre Pomerol vineyard planted nearly exclusively with Merlot.

The younger wine had impressive richness to its layered, velvety flavors of mocha, black cherry and currant, while the older vintage showed more mineral and herb character, with great focus lingering in the finish.

Seminar attendees, thrilled at the chance to sample one of the world's most elusive wines, inquired about the per-bottle price. Jacques Thienpont, who runs the property, shrugged. "Well, when we release it, it's not so bad, but then it doubles, triples and more."

Alas. At least enough remained for the disappointed to sneak a glass to lunch.

     Executive Chef Martin Hamann has created a six course menu to pair with the superb Bordeaux wines of the Thienpont family, including Vieux Chateau Certan—one of the most renowned estates of Pomerol—and the stunning Chateau Le Pin.  Braised oxtail and cippolini onion stew with American foie gras nugget and petit veal medallion with osso buco galette and wild mushroom ragout are two of the dishes set to accompany the Thienpont’s majestic Pomerols.
